Heaters and thick clothing are great, but sometimes you just need a hot, hearty meal to warm you from the inside out! Here are some incredibly tasty recipe ideas for your wintertime RV excursion!

Crock Pot Roast Meal

This recipe is so unbelievably easy! All you have to do is load up the ingredients into the slow cooker! After a few hours of cook time you'll have a tender, juicy roast that will make you feel so warm and cozy! The best part is, you won't have to worry about cooking a side dish to go along with it, since all the vegetables cook with the meat!

Ingredients:

  • Chuck roast

  • 4 to 5 potatoes, peeled and quartered

  • ½ lb. baby carrots

  • 1 stalk celery, chopped

  • 1 medium onion, sliced or quartered

  • 1 ½ Tbsp. Worcestershire sauce

  • 2 cloves garlic, minced

  • 1 sprig fresh thyme or ½ tsp. dried thyme

  • 2 Tbsp. olive oil

  • 2-3 C. beef broth (3 for larger roast)

  • 2-3 Tbsp. cornstarch (one Tbsp. per cup of broth used)


Directions:



  1. Season the roast to your liking on both sides with salt and pepper.

  2. Add olive oil to a pan and heat over medium-high heat. Add the roast and brown it on both sides, about four minutes on each side.

  3. Once done, place the roast in a slow cooker.

  4. If needed, add a bit more olive oil to the pan and add the onions and garlic. Cook until they begin to soften, about three to four minutes.

  5. Cut celery and place it in the slow cooker along with carrots, potatoes, onions, garlic, Worcestershire sauce, thyme, and broth. Set to low and cook for 7-8 hours.

  6. In the last hour of cooking, ladle out about one cup of liquid from your roast. Add one tablespoon of cornstarch per cup of broth used, and whisk completely into the liquid. Stir mixture into the roast, incorporating completely, and cook for one additional hour.

  7. Once the roast is completely cooked and vegetables are tender, remove it from the slow cooker and carve. Serve vegetables on the side, and enjoy!


Tater Tot Casserole

Ingredients:

  • 1 lb. of ground beef

  • 1 small onion, diced

  • 1-10.5 oz. can cream of chicken or mushroom soup

  • 1 Tbsp. Worcestershire sauce

  • Small bag of tater tots

  • ½ C. shredded cheddar cheese

  • Salt and pepper to taste


Directions:



  1. Brown the ground beef and onion together in a saute pan. Drain.

  2. Return beef and onions to the pan and add the soup and Worcestershire sauce and mix thoroughly.

  3. Pour mixture into a shallow baking dish, spreading evenly. Cover the top of the casserole with tater tots and sprinkle with cheddar cheese.

  4. Bake at 425 degrees for about 25 minutes, or until the tater tots are browned and the cheese is melted.


Camp Meatloaf

This is a classic, tasty dish that is practically effortless! It won't take up a lot of room to prep in your RV kitchen, which is always appreciated! Just toss it in the oven and enjoy this hearty dish! Just like Grandma used to make!

Ingredients:

  • 1 ½ lbs. ground beef

  • 1 egg

  • ½ C. ketchup

  • ¾ C. quick oats

  • 1 small onion, chopped

  • 1 Tbsp. Worcestershire sauce

  • 1 clove garlic, minced


Directions:



  1. Combine all the ingredients in a large bowl, making sure to mix well without over-mixing.

  2. Spray a loaf pan with non-stick spray and transfer your mixture into the pan.

  3. Bake at 350 degrees for about 50-55 minutes, or until the center of the loaf is no longer pink.

  4. Once done, remove from the oven, allow the meatloaf to cool for about five minutes, then remove from the pan, slice, and enjoy!


Packet Dinners

Packet dinners are a wonderful choice for wintertime RV cooking for many reasons! Prep is fairly easy, all the ingredients cook in the same packet, and you don't have to dirty a bunch of pots and pans making main and side dishes! This recipe is versatile for basic foil packets, but there are thousands of fantastic recipes out there that use a variety of ingredients! Experiment and find the flavor combos that you like best!

  • Meat of choice

  • Vegetables of choice (carrots, green beans, potatoes, cherry tomatoes, etc.)

  • Flavoring (seasoned salts, dry packaged soup mixes, etc.)

  • Butter

  • Aluminum foil


Directions:



  1. Chop vegetables into bite-sized pieces.

  2. Slice meat into thin pieces, as it will cook faster. If you’d like to keep your meat whole, leave vegetable pieces larger so that everything cooks evenly.

  3. Layer vegetables on the bottom of a large sheet of aluminum foil, which should be big enough to  wrap around all the ingredients.

  4. Add the meat on top of the vegetables, and sprinkle with the seasonings of your choice. Add a pat of butter on top of the meat.

  5. Seal the packet completely, and cook at 400 degrees for around 25 minutes, or until the meat is cooked thoroughly. Cook times can vary between different types of meat, so be sure to check your meat periodically for doneness!


Slow Cooker Overnight Oat

Just mix up these ingredients the night before, get your slow cooker going, and you'll enjoy warm, scrumptious, filling oatmeal in the morning!   • 5 C. milk of choice (nut milks, like almond milk, will work fine)

  • ½ C. maple syrup

  • 1 tsp. cinnamon

  • ½ tsp. vanilla extract


Directions:



  1. Whisk milk, maple syrup, cinnamon, and vanilla together in a bowl until thoroughly combined.

  2. Spray the inside of your slow cooker with nonstick cooking spray.

  3. Spread the oats evenly along the bottom of the slow cooker.

  4. Pour the milk mixture over the oats, and stir to combine.

  5. Set the slow cooker to low, and let the oats cook overnight.

  6. Enjoy some warm, delicious oatmeal for breakfast!
