It finally looks as we might be getting some winter weather.
With the onset of winter weather comes the need to keep your body warm, which means you need to up your calorie intake in you plan on spending time outdoors.
During the warmer months, the average camper would require about 2,000 calories on a daily basis to give them the energy that they will need, while winter camping would need camping meals that would provide them with as much as 6,000 calories on a daily basis.
With that in mind here are three recipes for the winter RV enthusiast.
The ingredients you will need are:
• 1-2 pounds ground beef
• 1 can tomato sauce
• 1 large can of pork and beans
• 2 cans whole potatoes
• 1 package medium-sized tortillas
• Optional grated cheese
Directions: Brown and drain ground beef. Add tomato sauce and pork and beans. Place on range top, stir and simmer for 15-20 minutes on low. Add potatoes cut into small bite-sized chunks. Stir and simmer 15-20 minutes. Heat tortillas on burner until warm. Roll tortillas and fold up one end. Spoon mixture into tortilla and eat.
The ingredients for this meal:
• 1/4 cup extra virgin olive oil
• 1/2 cup minced onion
• 1 pound lean ground beef
• 1-2 cloves minced garlic
• 2 tablespoons flour
• 1 teaspoon salt
• 1/4 teaspoon black pepper
• 1 small can mushroom stems and pieces, drained
• 1 can cream of mushroom soup, undiluted
• 1 cup sour cream
Directions: Melt butter in heavy skillet and sauté onion until soft. Add ground beef and garlic and cook on range top until beef is brown. Stir in flour, salt, pepper and mushrooms and cook five minutes. Add soup and simmer 10 minutes. Stir in sour cream and heat just until warm.
Meal in a Skillet
The supplies you will need are:
• 1 to 2 pounds ground beef
• 1 can undrained whole kernel corn
• 1 can ranch-style beans
• 1 onion, sliced
• 2 to 3 potatoes, sliced in round slices
• 1 can stewed tomatoes
• 1 to 2 packages cornbread mix
• Salt and pepper to taste
Directions: In cast iron skillet, brown and season ground beef. Layer potatoes on top of ground meat and place a layer of sliced onions on top of potatoes. Pour in undrained corn and spread over potatoes. Pour in undrained beans. May want to season lightly after each layer, being careful not to get too salty. Pour tomatoes over the top as the last layer. Cook on stove top or in oven until potatoes are tender. At this point, you may prepare your cornbread mix and pour over the top and bake in the oven until cornbread is done or prepare and bake the cornbread separately. Serves about 4-6 people.
