Are you headed out for a late-season winter road trip with your RV? The right food can make the journey even better! Here are some great RV recipes that you can make in your crockpot that not only saves propane, but also cuts down on moisture build up in the RV from not using the stove!
Chicken and Wild Rice Soup
Chicken and rice soup warms the soul! Ok, so maybe it’s not that heavenly, but this recipe is pretty close! Not only is it delicious, but it’s super simple to make!
Ingredients:
1 lb. chicken breast
¼ C. onion, minced
1 C. carrots, minced
1 C. celery, minced
¾ C. wild & brown rice blend, uncooked
2 Tbsp. real butter
1 large bay leaf
3 (14 oz.) cans chicken broth
¼ tsp. garlic powder
1½ tsp. salt
½ tsp. pepper
½ tsp. dried thyme
¼ tsp. dried sage
¼ tsp. dried rosemary
Directions:
Step 1: Place the chicken in the crockpot and top with vegetables, rice, butter, and bay leaf.
Step 2: In a bowl, combine the remaining ingredients. Pour over the chicken and vegetables.
Step 3: Cook on low for 4-6 hours, or until chicken is cooked and rice is tender.
Step 4: Shred the chicken with forks and serve!
Cheesy Chicken Noodle Casserole
Pasta is the ultimate comfort food! After a day out in the cold, this cheesy chicken noodle casserole is just what you need!
Ingredients:
1 C. carrots, chopped
1 C. celery, chopped
1 C. onion, chopped
1 lb. chicken breast
1 (10¾ oz.) can cream of chicken soup
1 (14½ oz.) can diced tomatoes, do not drain
1½ tsp. Italian seasonings
¼ tsp. garlic powder
¼ tsp. pepper
8 oz. egg noodles
½ C. shredded cheddar cheese
Directions:
Step 1: Place carrots, celery, and onion into the crockpot, and top with the chicken breast.
Step 2: In a bowl, combine the cream of chicken soup, tomatoes, Italian seasonings, garlic powder, and pepper. Pour over chicken.
Step 3: Cook on high for 4 hours.
Step 4: Add uncooked egg noodles, stir to coat. Cook for another 15 minutes, stir, and then cook for another 15 minutes, or until noodles are tender.
Step 5: Top with the cheddar cheese, and let it sit until cheese is melted.
Sloppy Joes
Sloppy Joes really hit the spot just about any time of year. With this recipe, there’s no browning the beef ahead of time. Just toss it all in and let it cook!
Ingredients:
1½ lbs. ground sirloin
1 small onion, chopped
1 (15 oz.) can tomato sauce
½ C. ketchup
2 Tbsp. brown sugar
1 tsp. Worcestershire sauce
1 Tbsp. mustard
4 cloves garlic, minced
½ tsp. salt
¼ tsp. pepper
Directions:
Step 1: Put everything into the crockpot and stir it well, making sure to break up the ground sirloin.
Step 2: Cook on high for 2-3 hours or on low for 6-8 hours.
Step 3: Stir and serve on buns!
