Sometimes with all that is going on during a summer RV vacation, a fast and easy to prepare meal comes in handy.
Gathering everyone for meals can be a logistical nightmare.
Once the group is together, nobody wants to sit around waiting for that meal.
So with that in mind, here are three recipes that are easy and fast to prepare so your group can get back to enjoying the great outdoors.
To kick off your day with a good hearty meal, here is a simple breakfast recipe.
BREAKFAST IN A BAG
Ingredients needed for this recipe are:
• Packaged fully cooked ham
• Bacon or sausage
• Chopped onion
• Diced peppers and tomatoes
• Sliced mushrooms
• Grated cheese
• Anything else you would like to add
Directions: Crack two or three eggs into a plastic resealable bag and break them up by squeezing the bag, then add whatever ingredients you would like in an omelet. Mix together by squeezing the bag. Squeeze as much air as possible out of the bag and seal it shut. Have a big pot of boiling water ready and drop the bag into the water. Boil for 12 minutes (15 minutes for three eggs). Be sure to keep the water boiling. Remove from water, unseal and slide a perfect omelet onto plate. Have salt and pepper, salsa or other condiments ready to put on omelet.
Dinner is always another meal that brings everybody together and can be a difficult to plan.
Here are a couple easy recipes that should please nearly everyone.
POT PIE IN A POUCH
The ingredients you will need are:
• Cooking spray
• ¼ to 1/3 pound ground beef
• 1 small diced potato
• Your choice of vegetables, including green beans, carrots, onions, green pepper – or anything else you like
• Salt and pepper
Directions: Before the cooking starts, you’ll need a bed of hot coals to work with and some aluminum foil. Lay the foil flat, spray it with some cooking spray, and place all of your ingredients in the center together, separating the ground beef into pieces so you don’t end up with a semi-raw patty. Then, fold up the foil so it encloses the ingredients in a pouch form, and simply place the pouch inside the bed of coals. Keep in mind that it’s very hot in there, so you’ll need to check the enclosure early and often. Cooking time is roughly 15 minutes, depending on the coals’ temperature.
POTATO PACKET WITH HERBS
These are the ingredients that you will need for this recipe:
• 2 tablespoon(s) margarine or butter
• 1 tablespoon(s) minced fresh parsley leaves
• 1/2 teaspoon(s) salt
• 1/2 teaspoon(s) freshly grated lemon peel
• 1/8 teaspoon(s) coarsely ground black pepper
• 1 1/2 pound(s) small red potatoes, each cut in half, or into quarters if large
Directions: In three-quart saucepan, melt margarine or butter with parsley, salt, lemon peel, and pepper. Remove saucepan from heat; add potatoes and toss to coat. Fold 30 x 18-inch sheet of heavy-duty foil crosswise in half. Place potato mixture on double thickness of foil and bring long sides of foil up and fold several times to seal well. Fold over ends to seal in juices. Place foil packet on grill over medium heat and cook 30 minutes or until potatoes are fork-tender.
