Greetings health conscious campers! I know you are out there and if you are anything like me, I have a hunch that you always have your eyes out for new recipes that are healthy, tasty and of course, easy to make.
Well, today I have this salad recipe that I came across in my readings and thought for all you camping health nuts, this would be great campground cooking recipe to have on hand. As much as I love a good salad, I also have a bit of a sweet tooth. I was looking over my past campfire cooking posts and noticed a lot of very, very sweet dessert recipes. What about a healthy dessert or snack recipe that will satisfy your sweet tooth? The first thing to come to mind was trail mix! I love trail mix as it's quick to make, tastes great and if you use the right ingredients, can be healthy too. So, read on as I share my Quick and Easy Camping Salad and Trail Mix recipes below.
Quick and Easy Camping Salad
What you will need:
1 1 pound can cut and drained green beans
1 15 ounce can sliced small tomatoes drained
Shredded lettuce, 3 cups
½ cup bottled thousand island dressing
Directions:
This salad serves 6. Looking to make it really healthy? Replace the canned veggies with fresh tomatoes and green beans from your local farmer's market and prepare using this Low-Fat Thousand Island Dressing recipe.
Easy Camper's Trail Mix:
What you will need:
1 package of granola cereal
½ pound chocolate chips
½ box raisins
½ pound peanuts
½ pound banana chips

Quick and Easy Camping Salad
What you will need:
1 1 pound can cut and drained green beans

Shredded lettuce, 3 cups
½ cup bottled thousand island dressing
Directions:
- Mix your beans and tomatoes and chill them.
- Put lettuce in a large bowl and cover with chilled beans and tomato mix.
- Spoon dressing over the tomatoes and toss right before serving.
