4 Quick n' Easy Hot Dog Recipes

I don’t know about all of you campers, but I was hungry when I sat down to write this and I had comfort food was on my mind. So what comfort food always seems to be in your RV's refrigerator during camping trips? Besides Ramen noodles and Kraft Mac n' Cheese, it's hot dogs of course! Nothing says camping like hot dogs over the fire! So I did some digging, looked through a few cookbooks and tried to find some yummy recipes that used hot dogs, would be a fun twist on the ordinary and would be easy to prepare over your campfire or RV's kitchen. Enjoy!

This recipe is a bit advanced, but it sure looks good: Criss-Cross Campfire Dogs
What you will need:

1 tablespoon plus 1 teaspoon honey
1 tablespoon plus 1 teaspoon sherry vinegar
6 cups finely shredded green cabbage
3 fresh red chilies seeded and sliced
2 tablespoons softened unsalted butter
2 tablespoons Dijon mustard
4 croissants split
4 large hot dogs or turkey dogs
2 tablespoons ketchup
1 tablespoon soy sauce
½ teaspoon vegetable oil
1 large garlic clove minced
Salt

Directions:

  • Take a large bowl and stir honey and vinegar together until honey is dissolved.

  • Add the cabbage and red chiles to the mixture, season with salt and toss.

  • Let stand about 15 minutes so that the cabbage becomes slightly soft.

  • In a small bowl blend butter and mustard.

  • Spread the croissants with the butter.

  • Light a grill and thread each hot dog the long way on a thick skewer.

  • With a sharp knife, make cuts at an angle in 3 rows down each dog, about a half inch apart.  On a large plate mix your ketchup, and soy sauce, oil and garlic.

  • Coat each dog with the mixture.

  • Grill your croissants over high heat until toasted and turn and grill on the other side for about 10 seconds.

  • Grill the dogs over high heat until nicely charred about 2 minutes.

  • Mound the cabbage salad on the croissants and lay hot dogs on top of the salad.

  • Enjoy!

And now, an easy recipe: Campfire Pronto Pups

1 package corn bread mix (Jiffy makes a great mix)

Directions:

  • Prepare the corn bread mix according to the directions on the package.

  • Place your dogs in a baking pan and cover them with the corn bread batter.

  • Place the baking pan over hot coals of the fire and cook until golden brown.

  • Cooking time may vary, serves 6.

And we go from easy to fast: Kabob Franks
What you will need:

Hot dogs or TURKEY dogs
Bologna slices
Dill pickle chunks

Directions:

  • Cut franks into 1 ½ inch cubes.

  • Put cubes onto skewers alternating dill pickle chunks and bologna slices.

  • Broil on a grill over the coals of your fire for about 10 minutes.

And of course I HAVE to include a recipe for: Pigs in a Blanket
Here is what you will need:

Package of hot dogs
Biscuit mix
Water
Campfire with a hot bed of coals
Stick or skewer for cooking

Directions:

  • Prepare biscuit dough according to the directions on the box.

  • When dough has been mixed, wrap the dough around a hot dog - don’t overdo the dough as your hot dog will not cook through.

  • When the dough and hot dog ends have been browned, serve with mustard and ketchup.

  • Enjoy!
