This quick and easy lemon chicken is ready in minutes and takes just a few ingredients to make. Pair it with the delicious feta rice and a side salad or vegetable and you have a complete meal. Ingredients 4 6-oz boneless, skinless chicken breasts 4 Tbsp. lemon juice, divided 1 Tbsp. olive oil, divided 2 tsp. garlic, minced ½ tsp. salt, divided ½ tsp. black pepper, divided Cooking spray 2 (8 ½ oz.) pouches of precooked brown rice 3 oz. crumbled feta cheese ½ C. fresh basil, chopped Directions

- Combine chicken, 2 tablespoons lemon juice, 1 teaspoon olive oil, and minced garlic in a seal-able plastic bag. Shake gently to coat the chicken. Let it stand for 10 minutes.
- Heat the grill to medium-high heat. Coat a grill-safe pan with cooking spray and place on the grill. Take chicken out of the bag. Throw away excess marinade. Shake ¼ teaspoon each of salt and pepper on chicken. Place in pan and grill for 6 minutes on each side.
- Heat rice according to package directions while the chicken cooks. Combine the remaining lemon juice and olive oil in a bowl, mixing with a whisk. Add the rice, remaining salt and pepper, feta, and basil. Mix well. Serve with chicken.
